Kale Salad

  • Bunch of Kale, washed, dried, ribs cut out and chopped into small pieces
  • Sweet Red Pepper
  • Saute Onions - we had them leftover from last night's dinner but I would use thinly sliced red onions as a substitution
  • Celery stalk - cut thinly at an angle
  • Plum Cherry Tomatoes - halved
  • Dill
  • One carrot - shredded
  • Zesty Vinaigrette - shallots, olive oil, red wine vinegar, salt, black pepper
