Twice Fried Plantains

I was craving these all afternoon so I got off my butt and just made them.
Peel a couple of ripe plantains, cut into inch chunks and fry each of the cut sides on low heat to cook them. Take off the heat onto a paper towel lined plate to drain.  Take each chunk and press down till you hear/feel them squish into a flatter pancake like patty.  Place back in the frying pan to crisp up each side of the newly exposed plantain flesh.  Enjoy as a side with Jerk Chicken or with a drizzle of honey.
