Orange Oatmeal Chocolate Chip Cookies with Craisins

 All the ingredients, at room temperature:
  • 2 sticks of unsalted butter - 1/2 lb 
  • 1 1/3 cup lightly packed brown sugar
  • 3 cups of quick cooking oats
  • 1 1/2 cups ap flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 tablespoons orange zest
  • 1 cup bittersweet chocolate chips
  • 3/4 cup craisins
Preheat oven to 350° F.
In a stand mixer bowl cream together light brown sugar and butter.  Once creamed and sides of the bowl scraped down add vanilla, eggs and mix to incorporate.  Add flour, baking soda, cinnamon, oats, orange zest, chips and craisins.

All the remaining ingredients mixed in, this makes a very thick batter
Using a 1 1/2 oz ice cream scoop to keep the cookies even, I placed them on two lippen pans lined with my recent nonstick liners from Amazon (2 for $13 shipped!).  After placing each scoop I moistened my clean hand and patted each cookie down to even the thickness for baking
Baked for 15-18 minutes, pans rotated half way between the oven racks and back to front to keep the cooking even.  Now nicely resting on a cooling rack and waiting for some fresh cold milk!

  1. I printed the recipe out... hopefully I have time to make a batch. I prefer craisins too! They look delish!
