Meatless Monday Dinner

I have been dreaming of cooler temps in part so I can make my favorite roasted veggies for #MeatlessMonday. Today we had cauliflower, carrots, potatoes, sweet potato and green and red bell peppers. Once roasted, they were topped with thyme, parsley and baby basil. Only seasoning is Mrs. Dash, fresh cracked black pepper and Grapeseed oil.

In addition, we had the tastiest butternut squash roasted to tenderness then dressed with thyme, parsley and drizzled with Maple Agave. Whoever thinks vegetarians deprive themselves haven't tied these spectacular and satisfying meals.
