Easy Oven Chili

Recipe:
  • 1 tablespoon coconut oil
  • 1 1/4 lbs. ground beef
  • 1 cup diced onion
  • 1 cup diced celery
  • 4 cloves minced garlic
  • 1 cup mixed bell peppers diced (red, yellow, green)
  • 1 fine minced jalapeno
  • 1/2 cup diced dehydrated tomatoes (made at home from our garden's harvest) *
  • 1/4 cup diced dehydrated bell peppers - green and purple *
  • 1 cup dry black beans (picked, rinsed and soaked overnight)
  • 1 cup dry Northern White beans (picked, rinsed and soaked overnight)
  • 1 - 15 oz can tomato sauce
  • 1 - 15 os can diced tomatoes
  • 2 cups diced fresh tomatoes, peeled
  • 3 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 2 teaspoons fresh cracked black pepper
*Optional ingredients, I happen to have them on hand and used them in lie of tomato paste (2 table spoons)
