Home Made Tomato Soup with Cheese Toast

  • 1/2 medium onion chopped and sauteed in a tablespoon of olive oil
  • 28 oz can of San Marzano tomatoes - low sodium and organic if possible
  • 4 cups of home made stock - I used turkey on hand in my fridge
  • salt & pepper to taste
  • 1/4 cup milk or cream - I used 2% milk today
  • dash of hot sauce for a bit of bite
Cheese Toast
  • Italian bread sliced into 1/2 inch thick pieces
  • Light Olio 'Butter'
  • Sprinkle of Garlic Powder
  • 6 Cheese blend
