- Bunch of Kale, washed, dried, ribs cut out and chopped into small pieces
- Sweet Red Pepper
- Saute Onions - we had them leftover from last night's dinner but I would use thinly sliced red onions as a substitution
- Celery stalk - cut thinly at an angle
- Plum Cherry Tomatoes - halved
- Dill
- One carrot - shredded
- Zesty Vinaigrette - shallots, olive oil, red wine vinegar, salt, black pepper
