Meatless Monday Lunch - Cajun Eggless Egg Salad

I know, ironic having chickens that lay eggs and making an eggless egg salad but I simply LOVE this recipe.
Drain an Extra Firm Tofu package (found in produce area of most grocery stores)
Slice into 1/2 inch slabs
Place slabs on a towel covered cookie sheet
Place another towel on top and another cookie sheet with something on top to weigh it down
Let sit for 30 minutes, check on how much liquid is being extracted about half way to see if you need to wring out the towel or replace if using paper towels
 Put tofu slabs into a bowl, using a form, break down the pieces until they are an even crumble
Now start adding your favorite flavorings - for this one I used scallions, dill, salt, black pepper, 1/4 finely chopped jalapeno, mustard, mayo, rice vinegar and cajun spices

Mix well and put on whole wheat crackers or in a pita with cucumber slices
