Tonight's Dinner - Chicken Salad and Zesty Quinoa

Zesty Quinoa - I left out the tomatoes because they don't hold up well as leftovers so we only put them on each of our plates.  Here is a link to the original recipe:
Zesty Quinoa Salad
Basic Quinoa cooking instructions: 1 cup Quinoa to 2 cups liquid (I use stock), salt & black pepper, a little olive oil at the bottom of the pan to start the quinoa.  Cook covered for 15 minutes covered.  Turn off heat but leave covered for 5 more minutes, then fluff with a fork. 

Leftover drilled chicken turned into a chicken salad.  Chopped chicken, celery, dill, scallions, mayo, lemon zest, lemon juice, salt & black pepper.
