BBQ Pulled Pork Cauliflower Crust Pizza

Sneak Peek of it right out of the oven

Blanched Cauliflower, about 10 minutes, don't overcook

Drain and place in a food processor 

Added about 2 1/2 tablespoons of Marscopone cheese, 3 cloves of garlic, about 1 1/2 tablespoons of parmigiano cheese, salt & pepper to taste 

Pulsed and tasted - needed something fresh so I added about 2 tablespoons of dill and a little more black pepper 

Removed from the food processor and spread evenly in a 1/4 sheet pan
***This is where I would make a change for the next time.  Either use a 1/2 sheet pan and spread thinner or put in less mixture in a 1/4 sheet pan.  It never got crispy enough to be picked up to eat but Paulie didn't complain (we both ate ours with a fork)***
Blind baked in a 400° F oven for 15 minutes then turned down to 375° F for an additional 15

While the crust was baking I got the veggies chopped - peppers, mushrooms and scallions (to finish after cooking) 

Lovely crust out of the over, sprinkled with a little parm 

Spread BBQ sauce on the crust and loaded with veggies, pulled pork and cheese.
Back in the oven at 375° F for 10-15 minutes 

Out and ready to eat!

  1. I have thought about making this crust because I am on a low carb diet. I made some mashed cauliflower and we didn't like it. The taste was too strong. But if you guys rated this 4.5 it must not be that bad. Was the crust crispy or soggy? Would you still spread it that thick, or do it thinner next time? It looks yummy. Thanks for sharing.

      Definitely thinner next time and will probably add a beaten egg to help bind and crisp up. The flavors were great but if we could pick it up it would be perfect!

  2. Another thought...... It might be yummy like a philly cheese steak with green peppers,onions, provolone and roast beef.

    1. that would be another great option, I would probably change up the flavor provide of the crust and not be so aggressive with the garlic and swap out the dill for parsley.

  3. I would never have thought of cauliflower crust. This is something I'd like to try sometime and wouldn't mind if I had to eat it with a fork if it tasted good. I do like cauliflower. Thanks, Natasha! :)
