Leftovers' Omelet - Late Saturday Lunch


6 Egg Omelet with Red Peppers, Red Onions, Cheese and Pulled Pork

Love out bright orange eggs, the girls are delivering daily.  This is a shared omelet of 6 eggs, 2 tablespoons of cream, salt and black pepper 

Lightly beaten to incorporate everything 
Non stick pan, just as the eggs start to set up, add 2 tablespoons each of fine chopped red onion and red pepper.  Once the eggs are ready to fold I added about 1/4 cup of shredded pulled pork and left the omelet on the heat just long enough to heat the pork through and melt 2 tbs. of shredded cheese.


I also made a small beet salad with oranges and red pepper and shredded home fries.

    1. Rita,
      There hasn't been a soft egg in a couple of weeks and the other day we got an egg from each of the 5 girls but this morning there was another broken egg. I think one of the girls is just really confused. I clean out the broken shells and any egg remnants because as soon as they get the taste for eggs, they are likely to keep breaking them. This is one of the reasons I go to the coop so many times each day, trying to catch each new egg before it gets busted.
