German Chocolate Cupcakes
Homemade Coconut Pecan Frosting
- 1 - 12 oz can of Evaporated Milk
- 1 1/2 cups sugar
- 3/4 cup butter
- 4 yolks, slightly beaten
- 1 1/2 teaspoon vanilla extract
- 1 - 7 oz package of shredded coconut - about 2 2/3 cups
- 1 1/2 cups chopped pecans
In a heavy bottom sauce pan, put Evaporated Milk, sugar, butter, yolks and vanilla over medium heat, stirring constantly until mixture thickens. Turn off heat after about 8-9 minutes and add coconut and chopped pecans. Frost cooled cupcakes, enjoy!
