Dinner - Challah Pepper Jack Grilled Cheese with Creamy Tomato Soup

I had a Challah from this weekend and thought it would be a nice twist on things to use it for today's #MeatlessMonday dinner as a grilled cheese base.  I added a couple of pieces of pepper jack, grilled each side to perfection and popped them in a 250 ° F oven to melt the cheese and have it on standby for when Paulie arrives home from work.  To accompany this unorthodox (pun intended!) grilled cheese I also made a batch of creamy tomato soup with a dash of hot sauce.   Want another alternative - slice some pear and place between the cheese pieces before grilling.  Sweet, spicy, salty and creamy which covers all those favorite notes.
