Dinner - Filet Mignon, Fingerling Potatoes and Pan Roasted Garlic


A surprising treat on a Thursday night for hubby who has been working later and later, delivering all those presents and online shopping deals.

I peeled 2 entire heads of garlic and slow pan roasted it in 1/2 cup of Grapeseed oil till the cloves turned a light golden brown.

The steak was patted dry after marinating in oil, salt and cracked black pepper and seared on all sides in a screaming hot pan (no additional oil added).  Once they were medium rare, they were removed to rest off the heat.  To the pan with all those tasty bits at the bottom I added about 1/2 cup of low sodium chicken stock, reduced to half on simmer, added a tablespoon of butter and more cracked black pepper and chopped parsley for a simply but tasty pan sauce.
