Dinner - Soft Beef Tacos, Homemade Guacamole and Caribbean Rice

I started with 2 lb of 90% lean ground beef from a local butcher, sauted till there was no pink remaining (about 8 minutes) 
No taco seasoning on hand, no problem, I added an 8 oz can of Tomato Sauce, 1 teaspoon each of Ground Cumin and Ground Coriander and 1 tablespoon of Chili Powder, 3 large garlic cloves microplaned and a hearty dash of hot sauce because I didn't have jalapenos in the house 
Once all the above ingredients were mixed in, I tasted for salt and black pepper, added as needed and turned of the heat after 5-7 minutes 
Homemade Guacamole - 3 Haas Avocados, 1/2 small red onion finely chopped, 3 garlic cloves microplaned, 1 vine ripened tomato chopped, 1/4 cup of parsley chopped (calls for cilantro but I think it tastes like chemicals), juice of a lemon or lime whichever you have on hand, splash of hot sauce or 1/2 of a jalapeno finely chopped, finally salt and black pepper to taste
Paulie made soft tacos for himself while I made a taco salad with all the trimmings and what I couldn't eat, minus the onions, went to the dogs.  Enjoyed by all!
