Hash - Potatoes, onion jam from earlier in the week, baby portabella mushrooms, fresh parsley, salt and black pepper

I saute the mushrooms in a pan on their own so they sear rather than sweat, then remove them to cook the potatoes

Once the potatoes are done, I add in the onion jam from the fridge

Completed with a sunny side up egg, although I don't have a photo because hubby served us and put the egg under the hash. I told him he is fired as my food stylist, lol, which he accepted humbly.
