Tonight's Dinner

Seared Salmon with salt, black pepper, dill and lemon using coconut oil 

Yellow rice with peas and red bell pepper  

A spoonful of rice in the bottom of the bowl with the salmon on top, my favorite crispy skin and a cheek or lemon 

Topped off with a mini cheesecake and sliced giant strawberry, not too shabby for a weeknight meal
