Meatless Monday Lunch - 8 Minuted Egg Noodles

This could not be any easier to make - 8 Minute Egg Noodles - cooked, drained and returned to the cooking pot off the heat.  Add artichoke hearts (halved), roasted red pepper strips, mushrooms (from the can - drained), tablespoon or two of butter, garlic powder (NOT Garlic salt), fresh cracked black pepper, red pepper flakes and 2 tablespoons of a good grated parmigiano cheese which makes a semi-dry creamy sauce. Meatless Monday can be flavorful and hearty!
