Pasta Salad

Here's what I do, I pop into our pantry (which is in our mudroom) to see what we have on hand and then start chopping/opening.

Recipe

  • 1 lb ditalini pasta, or your favorite small shape
  • 1 pint of plum cherry tomatoes, cut in half or quarters depending on size
  • 14 oz can baby corn
  • 14 oz can of black olives
  • 14 oz can of artichoke hearts
  • 3 - 8 oz cans of tuna packed in water
  • 2 roasted red peppers
  • 1/2 fresh red pepper
  • 2 -3 stalks of celery
  • 5-6 scallions
  • 1/4 cup chopped dill
  • 4 tbsp Olive Oil Mayo
  • 1 tbsp red wine vinegar
  • salt & black pepper to taste
