Dinner - Leftovers Made into Meat Pies


Yesterday I made tacos, I made more meat mixture than we needed last night just so I can make these adorable hand help meat pies 

The meat mixture was amended with mushrooms, scallions, cheese and the leftover rice 
Pop a can of biscuits, flatten out to have a bigger surface area and fill with a tablespoon of filling then pinch the sides after folding it over.  I don't mind that they popped open because the filling was not runny and I actually like the way they look right out of the oven

Served along side of leftover guacamole, the perfect weekday evening meal that's ready in 15 minutes
Did I mention they taste wonderful, they did.  Paulie is taking a couple to work for lunch tomorrow.
