Roasted and Marinated Yellow Peppers


I like to do these in a hot over, 425° F, till the char marks start to form 

These are the 3 bags of 'use immediately' $.99 I picked up from Interpoduce and knew exactly what I would make with them 

More char = even better flavor and easier to peel the outer skins but does not mean burnt 

Peeled and de-seeded with salt, black pepper and finely sliced fresh garlic overnight in the fridge 

A drizzle of olive oil 

And some red wine vinegar 

Looks good enough to eat as is but will most likely be used on sandwiches, in pasta salads and in simple hot pasta. I will place these in a glass mason jar or two and possibly share with family because these need to be used soon. Pop in the fridge and use in a week. You can seal them in the glass jars if you want to put them up for later but I just didn't have the patience.
