Recipes From the Pantry - Baked Eggs with Chives & Cream

Baked Eggs with Chives & Cream - Serves 2 - From Yolanda (Yoliebean)
2 tsp unsalted butter
4 large eggs
1 1/2 tsp fresh chopped chives
2 tbsp heavy cream
salt & pepper to taste

Position rack in the center of oven and preheat to 425 deg F.  Butter two 6 inch gratin dishes with 1 teaspoon of butter each.  Crack 2 eggs into each dish, season with salt & pepper and sprinkle with chives.  Drizzle 1 tablespoon of cream in each dish.Start over the yolk andwork around the dish.  Bake until eggs are bubbly and brown around the edges, about 5 minutes.  For firmer eggs bake 1 more minute under broiler setting. Remove immediately and enjoy!
