I had one Hasselback potato leftover from dinner over the weekend and didn't want to let it go to waste so I made myself a decadent Brunch for One - 2 Sunny Side Up Eggs, few Cherry Tomatoes, Avocado pieces with a sprinkling of Hawaiian Black Lava Salt
