Dinner - Good For You Meatballs & Balsamic Veggies

When was the last time you ate something that was good for you, low fat, low sodium, low carb that was tasty and satisfying.  Tonight we did!  These meatballs were juicy, flavorful, satisfying and guilt free.  I made them small enough to have 4 per serving.  I filled them with spinach and shredded carrots to keep the moisture level high because the ground sirloin was 90% fat free.  They were served over Balsamic Cauliflower and Carrots with a squeeze of lemon which brightened all the flavors. No rice, pasta, bread (except 3/4 cup Panko bread crumbs in the meatballs), potatoes... just what we needed today.  Plenty of leftover which can be served warmed and crumbled over a large salad or made into wraps.  The possibilities are endless.

Cauliflower and Carrots, perfectly caramelized with two tablespoons of Balsamic vinegar after roasting for about 20 minutes at 375° F, then another 10 minutes with the vinegar on.
