Banana Bread for Dinner

I just can't let food go to waste so when I saw the 2 bananas that fell behind the fruit bowl on the counter, it was the moment I knew there will be Banana Bread tonight 
The bread recipe:
  • 1/2 lb melted butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon good quality vanilla
  • 1 tablespoon of orange zest (optional but flavorful and fragrant)
  • 1 1/2 cups AP flour (All Purpose)
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 2 ripe bananas, sliced not mashed
  • 1 cup chopped nuts - walnuts or pecans
Preheat oven to 350° F.  In a bowl, mix melted butter with sugar, add eggs and vanilla (plus zest if using it).  In a separate bowl, mix dry ingredients - flour, Baking Soda & salt.  Combine both wet & dry, then add sour cream, mix and lastly add the sliced bananas and nuts.  Bake in a 9 x 5 bread pan, sprayed with non-stick cooking spray or buttered.  Start checking after 60 minutes, it's done when a toothpick comes out clean and dry.
